It is the simplest recipe and the recipe I make most often, you can replace dry wine with water, I also make it with water and wine and I like both options.

RECIPE PREPARATION Shells with french fries and mayonnaise sauce:

For 2 people we need 800 grams-1 kg of shells. Rinse well with cold water and leave for 30 minutes. Then we put them in a larger bowl with 150 -200 ml of white wine, 75 grams of butter. Let it boil, turning them slowly with a spatula until they are all open. Then we put over them 5-6 cloves of crushed garlic and a handful of finely chopped green parsley. Let it boil and turn off the heat.

Serve hot with french fries and a sauce made of 2 tablespoons of mayonnaise, one of yogurt, 2 cloves of crushed garlic and a teaspoon of finely chopped herbs. I wish you great appetite, they are delicious!

1. Sos Aioli

Mix again very well. Very slowly add 100 ml of beer and mix until the sauce becomes very fine and without chocolate. At the end add 1 teaspoon of Worcestershire sauce and 180g milk and cream (half-and-half). Boil the sauce over low heat until ready to serve.

For mayonnaise:
Prepared or bought mayonnaise, mix it with crushed garlic or freshly crushed cloves and Dijon mustard, then season with salt and pepper.
